Turn Your Summer Cocktails Into Popsicles

Piña Colada Popsicle

When you’re craving a tropical delight, there’s no doubt a piña colada is at the top of your list. This cocktail is creamy and delicious with a hint of coconut that transports you immediately to your favorite beach paradise. We have a popsicle recipe that incorporates all those fan-favorite flavors for a summer treat that can’t be beat. Make sure to freeze your “cherry garnish” layer before adding the cocktail mixture. This will allow a beautiful red pop of color to sit at the top of your popsicle without combining with the rest of the recipe.

The Recipe:

In a 6-ounce popsicle mold, add grenadine and freeze for 1-2 hours.

In a shaker, add rums, cream of coconut, lime juice and pineapple juice. Shake until combined. Remove popsicle mold from freezer once the grenadine layer has frozen. Pour the contents of the shaker over the frozen layer of grenadine and freeze overnight.

Mojito Popsicle

Refreshing is a good place to start when describing a mojito. Full of mint flavors with a touch of citrus and the bubble of club soda, it’s no wonder why this is a must-have cocktail for summer. Freezing this recipe allows the mint to shine bright and cool you off when you need it the most. In order to keep the mint placed evenly throughout the popsicle, it is important to freeze the mixture in thirds. If it is not frozen in parts, the mint will float up to the top and freeze there without allowing the flavor to be dispersed all through the popsicle.

The Recipe:

In a mixing glass, add mint leaves, rum, simple syrup, lime juice, club soda. Stir to combine. Fill a 6-ounce popsicle mold 1/3 of the way with the mixture and freeze for 1-2 hours. Remove from freezer and fill 2/3 of the way. Freeze again for 1-2 hours. Add the rest of the cocktail mixture and top with mint leaves. Freeze overnight.

Tequila Sunrise Popsicle

Orange you glad we turned this classic tequila cocktail into a popsicle? This beautiful drink is often a summertime fan-favorite due to the vibrant colors reflective of a sunset. To create this visual detail, allow the tequila mixture to freeze for a few hours, without freezing completely, before topping with grenadine. The red liquid will slowly fall through the semi-frozen mixture resulting in an ombre affect that is picture-perfect.

The Recipe:

In a shaker, add tequila, lime juice, orange juice and pineapple juice. Shake until combined and pour into a 6-ounce popsicle mold. Place in freezer and allow to freeze for 2-3 hours. Remove from freezer and top with grenadine. Freeze overnight.

Tips & Tricks

Use the 5:1 ratio: No matter the serving size, the trick to making boozy popsicles is to have a 5:1 non-alcohol to alcohol ratio. Aim for a final alcohol by volume (ABV) that is 5-10%. If the spirits you are using are higher than 40-45% ABV, you will want to use a different ratio that favors non-alcoholic drinks for the popsicles to freeze.

Freeze in layers: To create a layered affect, we recommend freezing each layer separately. Add the first layer to your mold and allow it to rest in the freezer until it is mostly solid before adding the remaining ingredients. If the first layers are not frozen prior to the final popsicle creation, the layers will mix together.

Popsicle removal: To release the popsicles from their molds, run the molds under warm water for 3-5 seconds. Due to the ABV, the popsicles have a quicker melting time. Make sure not to run them under warm water for an extended period. If you find that they’ve melted too quickly, add them to a glass and call it a slushie.
