Tequila Sour

2 ounces tequila reposado

1 ounce lemon juice

½ ounce lime juice

2 teaspoons agave nectar

2 dashes aromatic bitters

1 egg white (optional*)

Add tequila, lemon juice, lime juice, agave, bitters and egg white to a cocktail shaker without ice. Shake vigorously for 15 seconds. Add ice to the cocktail shaker. Shake again until chilled. Strain into a glass. Garnish with cherry and lime wedge.

*Adding an egg white will create a foam layer on the cocktail. Can substitute egg white with aquafaba (the liquid in a can of chickpeas) to create the foam or leave out entirely for no foam layer.
