Michter’s US*1 Sour Mash Sesame Wings

Ingredients

1 cup Michter's US1 Sour Mash Whiskey

½ cup tightly packed light brown sugar

3 tablespoons fresh lemon juice

3 cloves garlic, smashed

1, 2-inch piece ginger, peeled and thinly sliced

1 teaspoon coarse salt

1 tablespoon chili sauce

1 tablespoon toasted sesame seeds

3 pounds wings

Black pepper

Thinly slices scallions

 

Directions

Preheat oven to 475 degrees Fahrenheit. In a small saucepan over medium-high heat, combine whiskey, light brown sugar, lemon juice, garlic, ginger and salt. Bring to a boil, reduce to a since and continue to cook until syrupy, around 20 minutes. Strain through a fine mesh sieve. Add chili sauce and toasted sesame seeds. Arrange wings in an even layer on rimmed baking sheet. Season with salt and pepper. Bake until golden brown, about 20-25 minutes. Remove wings and toss with half the sauce. Return to baking sheet and continue to bake for 5-7 minutes. Serve wings with remaining sauce, sesame seeds and scallions.
