Gin Fizz

2 ounces gin

1 ounce fresh lemon juice

¾ ounce simple syrup

1 egg white (optional*)

Club soda

In a shaker, add gin, lemon juice, simple syrup and egg white and vigorously dry shake. Add ice and shake again. Strain into a glass and top with club soda.

*Adding an egg white will create a foam layer on the cocktail. Can substitute egg white with aquafaba (the liquid in a can of chickpeas) to create the foam or leave out entirely for no foam layer.
