Made from sugarcane and produced around the globe, rum offers a wide range of flavors, colors and aging styles. What is rum?

Rum is a distilled spirit made from sugarcane byproducts, most commonly molasses or fresh sugarcane juice. While it is closely associated with the Caribbean, rum is produced throughout Central and South America, the Caribbean and many other parts of the world.

Unlike many other spirits, rum is not governed by one universal production standard. Each country has developed its own traditions, resulting in a remarkably diverse range of styles. Depending on how it is distilled and aged, rum can range from light and crisp with delicate flavors to rich, complex and full-bodied.

Where did rum originate?

Rum's story begins with sugarcane. Historians believe sugarcane was first fermented in India as early as 350 BC, where it was initially used for medicinal purposes. As sugarcane cultivation spread across the Caribbean during the 17th century, rum production quickly followed.

Modern rum is widely believed to have originated on Caribbean sugar plantations, where workers discovered that molasses, a byproduct of sugar production, could be fermented and distilled into alcohol. The spirit rapidly gained popularity throughout Europe and Colonial America, eventually becoming one of the world's earliest globally traded spirits.

Today, countries like Jamaica, Barbados, Cuba, Guyana, Trinidad and Martinique continue to produce some of the world's most respected rums.

How is rum made?

Although production methods vary by country and distillery, most rums follow the same basic process. The way a rum is distilled, aged and blended largely determines its flavor, color and ideal use, which is why you'll find several distinct styles.

Harvesting

Rum begins with sugarcane, which is harvested and processed into either fresh sugarcane juice or molasses.

Fermentation

Yeast is added to the sugarcane juice or molasses, converting the natural sugars into alcohol. The type of yeast used and the length of fermentation significantly influence the rum's flavor profile.

Distillation

The fermented liquid is distilled to increase its alcohol content while concentrating flavors. Some distilleries use pot stills to create fuller bodied, more flavorful rums, while others use column stills for lighter, cleaner spirits.

Aging

Many rums are aged in oak barrels, often ones that previously held bourbon or whiskey. Others are aged in stainless steel tanks or bottled immediately after distillation.

Because many rum-producing regions have warm tropical climates, aging occurs much faster than it does for spirits matured in cooler environments. During this process, some liquid naturally evaporates, a phenomenon known as the "angel's share."

Blending

Before bottling, many producers blend multiple barrels together to create a consistent flavor profile. Some white rums are charcoal filtered to remove color, while certain darker rums may have caramel added to ensure a consistent appearance.

White Rum

Also called light or silver rum, this clean, crisp style is lightly aged and often filtered to remove its color. It's the go to choice for refreshing cocktails.

Gold Rum

Aged in oak barrels, gold rum develops notes of vanilla, caramel and spice, adding more richness and complexity to cocktails.

Dark Rum

Aged longer than lighter styles, dark rum offers bold flavors of molasses, caramel and oak. It's great in cocktails or enjoyed on its own.

Black Rum

The darkest style of rum, black rum delivers rich notes of coffee, caramel and baking spice that shine in tiki drinks and bold cocktails.

Premium Aged Rum

These carefully matured rums are crafted for sipping, with smooth, layered flavors similar to fine whiskey.
