Cinco de Mayo 2021 is just around the corner, and we are already dreaming about the different ways to celebrate. One particular way comes to mind: tequila, of course. Tequila is a special spirit. Some people love it and others have trouble thinking about it. But those who love it, REALLY love it. Load it.

Loaded Corona cocktail

If you love Corona Extra Mexican Lager and tequila, combine them into a loaded Corona. Don’t knock it until you try it. Take a swig of your Mexican cerveza, Corona Extra (Corona Light also works), and pour in one ounce of tequila. Shimmy a lime wedge into the top for a citrus flare. Combine these ingredients like a pro by squeezing your thumb to the top of the beer, creating a seal, and flip the beer upside down. Slowly flip it back upright, gently allow your thumb to release and enjoy, be careful not to do it too fast or some of the deliciousness will spray out. The refreshing flavors of Corona mixed with the agave-infused spirit create a perfect refreshment to enjoy on May 5th.

Bake it - but make it Cinco. Step up your cupcake game with these tequila-infused cupcakes for your Cinco de Mayo festivities. Leave the multi-step cake batter to the professionals and grab yourself a pack of cake mix; the work (and deliciousness) should be left for the toppings.

Margarita Cupcakes & Spiked Limes

Margarita Cupcakes & Spiked Limes

Cupcake:

  • 1 box white cake mix

Frosting:

Spiked Limes:

For the cupcakes: Line cupcake pan with preferred cupcake liners. Bake cupcakes as instructed on the box. When ready, allow to cool completely.

For the frosting: Add butter and 2 cups powdered sugar to a mixing bowl. Beat until smooth. Add remaining powdered sugar, lime juice and tequila to bowl. Beat until fluffy. Add frosting to cooled cupcakes. Sprinkle with salt and top with spiked limes.

For the spiked limes: Wash limes. Cut into halves and remove pulp. Set aside.

Bring 1 cup water to boil. Add boiling water and gelatin to a heat safe bowl. Mix until gelatin has fully dissolved. Add tequila and cold water to the mixture and mix well. Pour the mixture into lime halves and refrigerate until the mixture has completely set. May take between 2-3 hours.

Once fully set, cut the gelatin-filled lime halves in thirds to look like wedges.

The most iconic use of tequila is usually found in a cocktail, most popularly with the margarita. It’s a safe place for those who don’t choose tequila as their go-to spirit, and for adventurers who like to play around with unique flavors. Rim glass with lime wedge and roll in coarse salt. In a shaker with ice, add tequila, liqueur and lime juice. Shake and strain into the prepared glass. Garnish with lime wedge.

In a shaker with ice, add tequila, syrups and margarita mix. Shake for 20 seconds and strain into a glass over fresh ice. Garnish with a slice of mango and lime.

In a mixing glass, muddle fresh ginger and lime juice. Add tequila, liqueur, honey, bitters and lime juice. Stir well and double strain into a glass over fresh ice. Garnish with a lime wedge. 2. Update Ingredients: Fresh ginger, splash of lime juice, 1 ½ ounces Patron Silver Tequila, etc.

Rim a glass with salt and set aside. In a shaker with ice, add tequila, lime juice, agave nectar and pineapple juice. Shake well and strain into prepared glass over fresh ice. Garnish with a lime wheel and pineapple leaves.

In a large mixing bowl, add tomatoes and salt to taste. Let it sit for 10 minutes. Drain excess liquid. Combine remaining ingredients and mix well. Add additional salt to taste and allow to chill for 30 minutes. Stir prior to serving.
